Caught exclusively during the spring, between April and May, in the cold, nutrient-rich waters of the Bay of Biscay, these anchovies are selected at the time of year when their flesh reaches its peak in quality, tenderness, and succulence.
On the palate, they offer an intense yet surprisingly sweet flavor, characterized by a delicate and well-balanced savory note. The firm, meaty flesh provides an elegant and velvety texture that enhances the fish’s natural aromatic richness.
A prized and versatile delicacy, they are perfect when enjoyed on their own or served with warm toasted bread and a thin layer of butter. An ideal choice for elevating aperitifs and tasting occasions with a touch of authentic refinement.
Cantabrian Sea Anchovies are prepared according to the traditional salt-curing method, a slow process that can last up to 12-18 months, allowing the flesh to develop its distinctive balance of intensity, sweetness, and salinity.
Once the curing process is complete, each anchovy is individually cleaned, filleted, deboned, and carefully finished entirely by hand. The fillets, also selected for their generous size, are then carefully dried and arranged one by one in a tin with premium-quality olive oil.
This artisanal process preserves the integrity, firmness, and texture of the meat while enhancing the distinctive characteristics of one of the Cantabrian Sea’s most renowned specialties.

As this is a semi-preserved product, it must be stored refrigerated at a temperature between +5°C and +12°C.
To fully appreciate its aroma, texture, and flavor complexity, we recommend removing the tin from the refrigerator about 15-20 minutes before serving.
Once opened, keep the fillets covered with oil and enjoy within a few days.
